Super Easy Salmon

If you like this sorta thing… Here is a super-easy, super-yummo salmon recipe that is ready in 20 minutes and low cal, low fat.

  • 1/2 to 3/4 lb. wild Alaskan salmon fillet (or your favorite)
  • 2 tsp. Nayonaise (or other mayo substitute — use the real thing for more fat 😉
  • 1 tsp. ginger paste
  • 1 tsp. basil
  • 1/2 tsp. red chili paste
  • 1/2 tsp. crushed garlic
  • 1 Tbs. whole wheat bread crumbs (or Panko, or for a treat: crumbled up French’s French Fried Onions — but again, more fat!)
  • Olive oil spray
Pre-heat oven to 375. Lightly spray the bottom of a small casserole dish and place the salmon fillet skin side down. Mix together the remaining ingredients except for the breadcrumbs and spread evenly over the salmon. Top with breadcrumbs and bake for about 20 minutes. (Salmon should be at least 140 degrees.) It’s that simple! Goes great with steamed broccoli or fresh green beans seasoned with garlic pepper. This recipe is for two people, but you can easily double or triple it. It’s company-worthy. Also, if you have left-overs, it’s great chopped up cold on salad or smooshed up with a little plain greek yogurt for a salmon dip for veggies (just peel off the skin).
